Classically, ramen chefs added shoyu broth to chicken and pork ramen, but it's not uncommon now to find it in tonkotsu and beef broths. You want a prominent soy flavor in shoyu, so don't hesitate to add more tare or soy sauce to taste.

 

Shoyu (Soy Sauce) Ramen Broth

Ingredients

  • 4 cup Dashi
  • 4 cup Chicken Stock
  • 2 cup White Soy Sauce
  • ½ cup Tare
  • ½ cup Soy Sauce

Instructions

  1. Add all the ingredients to a saucepan. 

  2. Simmer the broth for 5 minutes and adjust the taste with additional chicken stock or soy sauce if needed.
