Purple Yam Balls
- 12 oz Purple Yam
- 2.5 Tbsp Butter
- 2 Tbsp Sugar
- Cut purple yam into thick round slices and place on a plate. Cover with saran wrap and microwave them for about 8 minutes (500W).
- Peel the skin and put them in a medium bowl. Mix with sugar and butter and mash the yams while they’re still warm.
- Scoop one portion of the mixture and place it on saran wrap. Squeeze the top to create a ball shape and repeat. This recipe makes about 12 balls.
- Enjoy with a cup of green tea!
