Purple Yam Balls

- 12 oz Purple Yam
- 2.5 Tbsp Butter
- 2 Tbsp Sugar
Cut purple yam into thick round slices and place on a plate. Cover with saran wrap and microwave them for about 8 minutes (500W).
Peel the skin and put them in a medium bowl. Mix with sugar and butter and mash the yams while they’re still warm.
Scoop one portion of the mixture and place it on saran wrap. Squeeze the top to create a ball shape and repeat. This recipe makes about 12 balls.
