
Purple Yam Baked Cheesecake
Ingredients
- ½ lb Purple Yam
- 8 oz Cream Cheese
- 2 oz Yogurt
- 3 Tbsp Milk
- ¼ cup Flour
- 3 Tbsp Sugar
- 2 Egg
Instructions
- Preheat oven to 335 F.
- In a medium bowl, mix cream cheese and sugar with electric mixer until creamy.
- Cut purple yam into thick round slices and place on a plate. Cover with saran wrap and microwave them for about 6 minutes (500W).
- Peel the skin and put them in a small bowl. Mix with milk and yogurt, and mash the yams while they’re still warm.
- In the cream cheese mixture, mix in eggs and yams. Sift flour and mix more.
- Line the round cake pan with baking sheet and pour in the batter. Bake for about 40-50 minutes.
- Cool it down and enjoy!
