Pork Spare Ribs with Spicy Koji Miso

Ingredients

  • 1 lb Pork Spare Rib

Miso Paste

  • 8 Tbsp Miso
  • 4 Tbsp Sake
  • 4 Tbsp Mirin *1
  • 2 tsp Sugar
  • 2 tsp Grated Ginger
  • 2 tsp Grated Garlic
  • 4 Tbsp Shio Koji
  • 2 tsp Shichimi (Nanami) Togarashi

Instructions

  1. Preheat oven to 450F.
  2. Mix miso paste ingredients in a small bowl, set it aside.
  3. Baste miso on pork spare ribs. Rest it for at least 20 minutes in room temperature.
  4. Line baking pan with parchment paper. Place spare rib, and cover with aluminum foil.
  5. Bake it for 20 minutes.
  6. Remove aluminum foil and bake for additional 10 minutes.
  7. Enjoy!
