Fresh Fruits and Mashed Tofu Salad

Ingredients

  • ½ package Tofu (6-8 oz)
  • 1 Tbsp Sugar
  • 1 Tbsp Soy Sauce (Preferably Usukuchi) *1
  • 2 Tbsp Tahini
  • 2 Tbsp Dry Walnuts
  • Plenty of Fruits: Raspberries, grapes, kiwis, cantaloupes, pineapples, blueberries, etc

Instructions

  1. Take tofu out from the package and drain water. Remove tofu from package and wrap it in paper towels to remove any excessive water.

  2. Mix tofu with sugar, soy sauce, and tahini in a food processor until smooth.

  3. Chop dry walnuts. Toast them on a dry pan over medium heat for about 2 minutes, until they are golden brown and smell toasted. 

  4. Wash and cut fruits into small pieces.

  5. In a medium bowl, toss pineapples, grapes, and cantaloupes and tofu mixture together.

  6. Portion tofu mixture into serving bowls and place other fruits to decorate the bowl. Sprinkle toasted walnuts to serve.
