
Edamame Toast
Ingredients
- 4-8 Bread of your choice
- 1 Tomato, sliced
- 1 Lemon, sliced
Edamame Dip
- 14 oz Frozen Edamame
- 4 Tbsp Parmesan Cheese
- 4 tsp Lemon Juice
- ¾ cup + 2 Tbsp Soy Milk or Milk
- 2 Tbsp Olive Oil
- Salt and Pepper
Instructions
- Heat up edamame as directed on the package and take beans out of edamame skins.
- In a food processor or mixer, mix all of the edamame dip ingredients until smooth. Salt and pepper to taste.
- Toast bread and spread edamame dip. Garnish with tomato and lemon slices to serve.
