Cook teriyaki sauce rather than buying a bottle. Homemade always tastes better.
Basic Teriyaki Sauce

- 1 cup Mirin
- 1 cup Soy Sauce
- ½ cup Sake such as Sho Chiku Bai Classic or Gekkeikan
- ½ cup Dark Brown Sugar
Whisk together the mirin, soy sauce, sake and brown sugar in a saucepan. Bring the mixture to a boil.
Reduce the heat to a simmer and continue cooking for about 20 minutes, or until the sauce coats the back of a spoon.
Take the pan off the stove and let the teriyaki sauce cool to room temperature. Store teriyaki sauce in an airtight container in the refrigerator.
