  1. Place the eggs in a bowl just large enough to hold them. Mix the sake, soy sauce, mirin and sugar.

  2. Pour the marinade over the eggs. Cover the eggs with a paper towel, keeping the edges inside the bowl. Marinate the eggs in the refrigerator for 4 to 12 hours.
